How to make tzatziki sauce

While it is true that the basis of tzatziki is Greek yogurt, cucumbers are equally important. It is essential that they are organically grown cucumbers, as we are going to use them with the peel. After having washed and cut them at the ends, we open them in two lengthwise, so that we can remove the seeds (if any). The seed, in addition to being often indigestible, is too rich in water and can affect the final result of the tzatziki sauce recipe. It is therefore necessary to grate the cucumbers cleaned of seeds, using a classic manual grater. We have preferred to use the large meshes of the grater, so as to leave small pieces of cucumber of a certain consistency (there are those who like to cut them more finely). The next step is to pour the cucumbers into a colander placed over a bowl, so as to eliminate the vegetation water, and then place in the fridge for an hour.

Preparation of garlic

Once the time necessary to drain the water from the cucumbers has elapsed, let’s get to the heart of the tzatziki recipe, with the preparation oftewm. The garlic (deprived of its core) must be finely cut and then crushed with a knife, as if to create a sort of cream.

Adding the ingredients to the yogurt

It’s time to add all the ingredients to the Greek yogurt and complete the tzatziki sauce recipe. A note: it is better to use Greek yogurt, as it has a very creamy consistency, different from that of normal white yogurt.
Let’s start, then, by adding garlic, salt and then the extra virgin olive oil to the yogurt, then let’s mix it first.
We continue adding the cucumbers and making a second amalgamated.
Let’s close our tzatziki recipe by adding the mint dry and continuing to mix until a homogeneous cream is obtained.
