Their strength is the combination of a soft and crumbly texture, which literally makes them melt in your mouth, and the intense but delicate taste of lemon. Lemon biscuits can be eaten at any time and on any occasion. You can enjoy them for breakfast with a coffee or a glass of milk, as a snack with tea, but they are also perfect as a dessert, accompanied by a glass of raisin wine, or lemon juice. They are fragrant, light and have the shape of the good things of the past. If you need a cuddle, all you have to do is follow the recipe!

Remove the butter from the fridge at least 30 minutes before preparation so that it is soft when used. Put the butter and sugar in a bowl and mix with a spatula.

Add the lemon zest. Squeeze the lemon and add the juice slowly.

Add the sifted flour, vanillin and baking powder and knead by hand for a few minutes. The dough must be soft. Cover with cling film and place in the fridge for 30 minutes.

Take a baking sheet and place a sheet of parchment paper on it. Pour the icing sugar into a saucer. Pick up the dough and form balls of about 25 g. Then roll them in icing sugar. Once a ball is ready, place it on the baking sheet. The balls must be 4 cm apart from each other.

Turn on the fan oven at 170 degrees and when the oven reaches the temperature, insert the pan and cook for 18 minutes. Depending on the oven, the time may vary by a few minutes, so check the cooking. The cookies will be ready when they turn lightly golden.

It is preferable to use untreated organic lemons.

The butter can be replaced with 90 ml of seed oil.

Freshly baked lemon biscuits are more fragile and can break easily, let them cool on the pan before removing them.

If you use a static oven, the temperature from set is 180 degrees. It is always better to check the cooking after the first 15 minutes.

Lemon biscuits can also be kept for about ten days, obviously they will be a little drier than the first few days, but still excellent. It is very important to use an airtight glass or tin container and, if possible, place a sheet of baking paper on the bottom.

These treats can be frozen for a maximum of 5 months. When you want to consume them, take them out of the freezer and leave them at room temperature for 15-20 minutes.
